The Filet Mignon of Chicken: Your Chicken Feast

According to a study cited by The New York Times, the consumption of chicken has increased over the last decade just as Americans have been eating less red meat. More affordable and easier to prepare, white meat chicken can be a delicious alternative to other meats. What Is A Chicken Tenderloin?
Simply put, chicken tenderloin is, “a strip of muscle that runs along the inside of the breast, the part of the breast closest to the bone”. In other words, the chicken tenderloin is the juiciest, most tender part of the chicken.
Why Is It So Good?
The more often a muscle is used, the more that muscle develops and the tougher the resulting meat will be. Being so close to the bone, the chicken tenderloin muscle is rarely used and remains tender and succulent.

Therefore, the USDA has little control over what is sold under the “chicken tenderloin” label. Some fast food restaurants may try to pass off ground chicken that’s been reprocessed into strips as chicken tenderloin.

In the Kitchen: Southern Fried Chicken

In this YouTube video, learn how to prepare Southern Fried Chicken in your own home. For crispy, delicious fried chicken, the video recommends marinating the chicken in buttermilk for up to 24 hours, frying the chicken pieces four at a time, and keeping the finished pieces warm in a 250 degree oven while the rest of the chicken fries.
